Amazónico Miami Finds Its Rhythm in Flavor and Connection

With the highly anticipated opening of Amazónico Miami in the heart of Brickell, the brand brings its signature rhythm to one of the world’s most dynamic dining scenes.

With its vibrant mix of Latin American flair, culinary artistry, and immersive atmosphere, Amazónico has become a global destination for those seeking more than just a meal—it’s an experience that awakens all the senses. Founded by Sandro Silva and Marta Seco, the Madrid-born restaurant group is celebrated for its lush, jungle-inspired interiors, theatrical open kitchens, and menus that pay homage to the Amazon and beyond. Now, with the highly anticipated opening of Amazónico Miami in the heart of Brickell, the brand brings its signature rhythm to one of the world’s most dynamic dining scenes.

Spanning three floors, including an intimate sushi counter, an electric lounge, and a rooftop terrace crowned by the dazzling Peacock Bar, Amazónico Miami captures the spirit of Latin America while embracing the cosmopolitan energy of its new coastal home. Whitewaller spoke with Amazónico’s founders, Sandro Silva and Marta Seco, about how this new space invites guests to flow seamlessly between dining, music, and connection.

WHITEWALLER: Amazónico is brand new to Miami. Why did you want to open a location here? 

MARTA SECO: Miami was always a natural next step for us. From the very beginning, we felt that Amazónico’s spirit, its energy, rhythm, and celebration of life, aligned perfectly with this city. Miami has such a vibrant cultural mix; it’s a place where Latin America meets the world. Its culinary DNA of Latin American cuisine, the accent of different kinds of quality meats, and a unique approach to cooking techniques, in addition to being an exciting lifestyle brand, in our view, suits the market.

A Vivacious Culinary Program

WW: Tell us a bit about the culinary program, curated by Sandro and rooted in Brazilian traditions. How does it draw on ancestral ingredients? What’s exclusive on the menu? 

SS: Our culinary philosophy has always been about honoring tradition while creating something new. In Miami, we’ve taken inspiration from the richness of the Amazon and the diversity of Latin America. Signature dishes include Ensalada Amazónica, a vibrant mix of mango, avocado, confit tomato, kalamansi, and citrus and Arroz Chaufa, red, black, and white whole grain rice served with duck breast and a fried egg. The Lubina al Espeto features line caught sea bass, slow cooked over an open flame on traditional metal skewers.

Another highlight, the Amazónico Maki, blends mango, avocado, coconut, and cacao nibs. In addition to these favourites, the Miami menu introduces exclusive new creations such as Corvinas, yellowfin bass, artichokes, and a spicy warm broth, Centollo, Alaska king crab with summer leaves and nikkei dressing and Guacho de Langoustino, black tiger prawns with semolina and coconut bisque.

At the heart of the restaurant lies our open kitchen, where fire and flame take centre stage. Guests can witness the full culinary experience unfold, from grilling a wide selection of meats, including our exclusive premium Wagyu beef sourced from Okeechobee, Florida (a supplier used only by us), to the final touches of our showstopping desserts. The experience culminates with the Piña Rostizada: a roasted, caramel glazed pineapple slowly turning over open flames, served with corn cake and coconut sorbet. 

Creating Experiential Spaces

WW: The space spans three floors, including a level dedicated to a bar and lounge, a sushi counter, and a rooftop. How do you envision Miami’s visitors and locals enlivening the space—from inclusive DJ experiences to private, intimate dining experiences? 

MS: Amazónico Miami was designed as an experience that evolves through the night. The first floor is where the evening begins, with dinner, a stage that straddles both indoor and outdoor where our live bands perform daily, and that wonderful mix of theatre from the open kitchen, flavors and conversation. Then, guests can ascend to the lounge on the second floor, where DJs, percussionists, and our mixology team take over, creating an atmosphere that’s both immersive and playful. For those seeking something more intimate, there’s the sushi counter or private dining room, places that feel hidden, personal, and special. And now, with the rooftop open, the night continues under the stars. We want people to flow between these worlds through dining, dancing, and connecting.

WW: A standout feature of the Miami location is its third-floor rooftop. What’s special about this space? How does it remain inspired by its Monte Carlo counterpart but offer something new? 

SS: The rooftop is a celebration of Miami’s nocturnal energy. It’s lush and tropical, but also architectural and sophisticated, you feel the heartbeat of Brickell beneath you, yet you’re surrounded by nature. The Peacock Bar, with its custom design by Lázaro Rosa Violán, anchors the space. It’s bold and glamorous, with an LED-paneled DJ booth that sets the rhythm of the night. The cocktails are vibrant and fun – the Amazonegroni and Peacock Spritz have become instant favorites, and the bites, like the Picanha Medianoche Sliders or Atun Okinamasu con Caviar, reflect that playful mix of Latin flavor and cosmopolitan flair. It’s the perfect way to extend the Amazónico journey into the late hours.

WW: Next year, the brand will celebrate its 10th anniversary. What has Amazónico remained rooted in over the past decade?

MS: Amazónico has always been about taking our guests on a sensory journey. We created a place where people feel transported, inspired, and can escape to somewhere exotic. Though we’ve grown across continents, Amazónico’s soul remains unchanged: a tribute to Latin America with the flavors, music, and culture.
