Opened in 1920 as café bar Chez Robinson, husband and wife Paul and Baptistine Roux soon relaunched the spot as La Colombe d’Or—a restaurant with a three-room inn. Today, the space is home to 15 rooms, 10 suites, a traditional French restaurant, and a thoughtful collection of art, which has been accumulated by the family over the last century.
